While there are many ways to eat barrel-aged Feta, the absolute best way to showcase its complex, woody, and slightly spicy profile is Bouyiourdi (pronounced boo-your-dee).
Originating in northern Greece but beloved nationwide, this is a warm, baked appetizer. Baking the feta in a clay pot softens its texture to a lush creaminess, while the heat coaxes out the rich, rustic aromas of the oak barrel without losing the cheese’s signature bite.
Traditional Greek Bouyiourdi (Baked Feta)

The beauty of this dish lies in its simplicity. The tomatoes break down into a sweet, jammy sauce, and the peppers add a bright, earthy heat that perfectly cuts through the rich, salty fat of the Arcadian cheese.
Ingredients
- 8 oz (220g) Arcadian Feta PDO (thick sliced, not crumbled)
- 2 medium ripe tomatoes, sliced into rounds
- 1 green bell pepper or banana pepper, sliced into rings
- 4 tbsp extra virgin olive oil (the robust, peppery kind)
- 1 tsp dried wild Greek oregano
- A pinch of red pepper flakes (boukovo)
- Optional: 2-3 tbsp of grated Graviera or Kefalotyri cheese to sprinkle on top for a golden crust
The Method
1.Prep the clay pot:2 mins.
Preheat your oven to 400°F (200°C). Grab a small, shallow clay baking dish (or a small cast-iron skillet). Drizzle a tablespoon of olive oil on the bottom.
2.Layer the base:3 mins.
Lay half of your tomato and pepper slices at the bottom of the dish. Season them lightly with a pinch of oregano and red pepper flakes.
3.Add the star player:2 mins.
Place the thick slab of Arcadian Feta right on top of the vegetables. Drizzle it generously with another tablespoon of olive oil.
4.Cap and season:3 mins.
Cover the feta with the remaining tomato and pepper slices. Sprinkle the rest of the oregano, red pepper flakes, and the grated hard cheese (if using) over the top. Drizzle with the remaining olive oil.
5.Bake until bubbly:20-25 mins.
Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for another 5 to 10 minutes, or until the feta is soft, the tomatoes have collapsed, and the edges are bubbling and slightly caramelized.
The Serving Secret: Serve this bubbling hot straight from the oven. You will need a basket of crusty, grilled sourdough bread. Do not use a fork—this dish is meant to be scooped up, mixing the molten, salty feta with the sweet tomato juices and rich olive oil.
